The connoisseur's paomo. Classic yangrou paomo is a soup; xiaochao ("small stir-fry") takes the same ingredients — hand-torn bread, beef, glass noodles — and sends them through a wok with black vinegar, chili and tomato. Out comes a glossy, tangy, mildly hot plate instead of a bowl, at ¥25–40. Locals treat the choice as a personality test: soup for comfort, xiaochao for appetite.

How to eat it

Same ritual as paomo proper: you get the flatbread and tear it yourself — pea-sized pieces, the smaller the better — then the kitchen woks it to order. Ask 机器馍 (jīqì mó) if you'd rather skip tearing. The acid and chili mean it drinks beer better than the soup version. 加辣 (jiā là) for extra heat.
