What is Roujiamo?

Roujiamo (肉夹馍) is Xi'an's most famous street food - often called the "Chinese hamburger". It consists of crusty flatbread (mo) stuffed with tender, braised pork. The bread is baked in a traditional clay oven (tandoor), giving it a crispy exterior and soft interior.

History

Roujiamo has over 2,000 years of history, dating back to the Qin Dynasty. It's said to have been a favorite of Emperor Qin Shi Huang's soldiers.
